Summary

This study investigates whether replacing some wheat flour with legume flours (chickpea, pea, or lentil) in Arabic bread can reduce blood sugar spikes after eating. Overweight or obese adults aged 18–65 will consume different breads and have their blood glucose and appetite measured. The goal is to see if these alternative flours offer a healthier option for blood sugar control.
