Summary
This study tests whether a diet rich in fermented foods (like yogurt, kimchi, and sauerkraut) is tolerable and can improve quality of life for survivors of critical illness, including severe COVID-19. Researchers will enroll 40 adults who spent more than 48 hours in the ICU and have ongoing mental, cognitive, or muscle problems. The goal is to see if boosting gut health can reduce inflammation and help the brain and body recover.
