This study will compare how vegan, omnivorous, and carnivore diets affect the way LDL cholesterol particles clump together in the blood, which can lead to artery plaque. Researchers will measure blood lipids and other health markers in 90 adults aged 25-60 who have followed their diet for at least 6 months.
