Summary
This study will test whether a simple skin scan can accurately measure how many fruits and vegetables toddlers eat. Researchers will give 150 healthy 2-year-olds either applesauce or a fruit-vegetable puree for 4 weeks, then compare skin carotenoid levels with blood tests and food diaries. The goal is to validate a non-invasive tool for better childhood nutrition research.
