Memory shield? starch diet trial aims to slow brain decline

Summary

This study tests whether eating foods with resistant starch (a type of fiber) can slow down memory loss in people at high genetic risk for cognitive decline. About 70 adults aged 40 and older will either eat high-starch foods or regular starch foods daily. Researchers will track changes in thinking skills, blood and gut health, and brain scans over time.
