Summary
This study tests whether replacing regular starchy foods with quinoa products (noodles, powder, cookies) for 14 weeks can improve blood sugar control, cholesterol levels, and glucose stability in people with early-stage type 2 diabetes. Sixty adults aged 20–70 with diabetes for less than 5 years will be randomly assigned to either a quinoa diet or their usual diet. The goal is to see if quinoa can reduce the need for diabetes medication and help the pancreas work better.
