Bean nutrient study seeks to unlock better mineral absorption

NCT ID NCT06327529

First seen Dec 10, 2025 · Last updated May 23, 2026 · Updated 26 times

Summary

This study looks at how well young women absorb zinc and iron from four types of common beans. Researchers want to see if natural compounds in beans, like phytate and polyphenols, affect mineral absorption. Fifteen healthy women who eat beans regularly will participate in a crossover study where they eat different bean varieties and have their blood tested.
