Bean study aims to unlock better mineral absorption
NCT ID NCT06327529
First seen Jun 24, 2026 · Last updated Jun 27, 2026 · Updated 1 time
Summary
This study looks at how well the body absorbs zinc and iron from four types of common beans that have different levels of natural compounds called phytate and polyphenols. Fifteen healthy young women will eat each bean variety in a random order, and researchers will measure mineral absorption from blood samples. The goal is to learn which bean types might offer better nutrition.
What this could mean
Our plain-language read of the trial. This is informational only — not medical advice or a prediction.
Active substance
Common beans (Phaseolus vulgaris) with varying phytate and polyphenol levels
What this could lead to
If successful, this could help identify bean varieties that provide more zinc and iron, potentially improving nutrition for populations that rely on beans as a staple food.
What could go wrong
This is a small, early-stage study with only 15 participants, so results may not apply broadly. It measures absorption in a lab setting, not long-term health outcomes.
