Summary
This study tests whether replacing regular starchy foods with quinoa products (like noodles and cookies) for 14 weeks can improve blood sugar control, reduce cholesterol, and stabilize glucose swings in people with early type 2 diabetes. Sixty adults aged 20-70 with diabetes for less than 5 years will be randomly assigned to either a quinoa diet or their usual diet. The goal is to see if quinoa can help reduce the need for diabetes medication.
