Summary
This study looks at how eating a high-fat meal changes levels of certain fats in the blood called ceramides, and whether those changes affect blood vessel function. Healthy adults aged 18 to 40 will eat either a meal rich in long-chain fatty acids (which raise ceramides) or medium-chain fatty acids (control). Researchers will measure blood flow and use a special microscope to check tiny blood vessels in the skin.
