This study looked at how eating a Western diet (high in saturated fat, fructose, and calories) for 8 weeks affects immune cells called monocytes in healthy, normal-weight adults aged 20-45. Researchers measured changes in a protein called MKP-1 and analyzed gene activity to understand how the diet might prime the body for heart disease.
