Summary

This study tests whether eating a hay-aged cheese every day for 12 weeks can lower cholesterol in people with mildly high levels. Forty adults will eat either the special cheese or regular cheddar. Researchers will check blood, stool, and urine to see if changes in gut bacteria help reduce cholesterol.
