Summary
This small pilot study is testing whether eating Greek bottarga, a type of fish roe, can improve markers of metabolic health like cholesterol and blood sugar. It will involve 20 adults in Massachusetts who have conditions like prediabetes, high cholesterol, or obesity. Participants will eat bottarga daily for 8 weeks, and researchers will compare the results to eating a dairy product with the same calories.
