Summary

This study is testing whether adding fermented foods like yogurt, kefir, and kimchi to the diet can help control inflammation and improve quality of life for adults with mild to moderate ulcerative colitis. Researchers at Stanford University are enrolling 21 participants to see if this dietary change reduces gut inflammation markers and eases symptoms.
