Summary
This Phase 2 trial tests whether erythrodiol, a natural compound in pomace olive oil, can reduce early signs of atherosclerosis (hardening of the arteries). Twenty-two healthy adults will eat high-fat meals with different doses of erythrodiol, then researchers will measure how their bodies process fats and whether it reduces inflammation. The goal is to see if this olive oil component could help prevent heart disease.
