Summary

This study tests whether an ancient type of wheat (Triticum monococcum) causes fewer stomach and other symptoms than modern wheat in people with non-celiac wheat sensitivity. Sixty-eight adults who follow a wheat-free diet will eat both types of wheat in a blinded crossover design. Researchers will track symptoms, quality of life, and look for blood markers that could help diagnose the condition.
