Summary
This study tested whether healthy adults can safely digest protein from purple bacteria. Twelve participants ate a dairy product with or without added purple bacteria on two separate days. Researchers measured amino acid levels in their blood over four hours to see how well the body absorbed the protein. The goal was to explore purple bacteria as a new, sustainable food source.
