Summary
This study is testing a new nutrition education program for children recently diagnosed with celiac disease. It aims to teach families how to build a gluten-free diet using more natural, whole foods and fewer processed, rice-based products. Researchers want to see if this approach improves body composition, diet quality, and reduces exposure to arsenic, which can be higher in some gluten-free processed foods.
