Can a new diet plan protect kids with celiac disease from hidden arsenic?
NCT ID NCT06356220
Summary
This study is testing a new nutrition education program for children recently diagnosed with celiac disease. It aims to teach families how to choose healthier, less-processed gluten-free foods instead of relying on packaged rice-based products. Researchers want to see if this approach improves children's body composition, diet quality, and reduces their exposure to arsenic, which can be high in some gluten-free foods.
