Summary

This study looks at how well different food frequency questionnaires estimate the amount of fruits and vegetables people eat. Researchers will compare the questionnaires to actual diet records and to levels of carotenoids (plant nutrients) in blood and skin. The study involves 100 healthy adults who do not smoke or take supplements. The goal is to find better tools for measuring diet in research.
