Summary
This study aims to understand how mixing different types of dietary fiber into a common food like a scone affects blood sugar levels after eating, feelings of fullness, and gut bacteria. Overweight but otherwise healthy adults will eat seven different fiber-enriched scone recipes over several weeks while researchers monitor their blood sugar and collect other health data. The goal is to gather knowledge that could help design healthier processed foods in the future.
