Summary
This study aims to understand how different types of fiber, when mixed into a common food like a scone, affect blood sugar levels after eating, feelings of fullness, and gut bacteria. Overweight but otherwise healthy adults will eat several versions of fiber-enriched scones over a few weeks while researchers monitor their responses. The goal is to gather knowledge that could help design healthier processed foods in the future.
