Summary
This study looks at whether a simple urine test can tell if people with non-celiac gluten sensitivity have accidentally eaten gluten. About 40 adults on a gluten-free diet will provide urine samples to check for gluten proteins. Researchers will also see if symptoms like stomach pain or headache match up with positive urine results. The goal is to help patients and doctors better track diet adherence and understand symptom triggers.
