This study looked at how eating potatoes (mashed, boiled, or baked) compares to eating white rice, pasta, or couscous affects sleep quality and blood sugar control. Researchers tracked 71 healthy adults aged 40-80 over several days using sleep monitors and continuous glucose monitors. The goal was to see if potatoes, often avoided, might actually be better for heart and metabolic health than other starchy foods.
