Summary

This study is testing whether a diet that eliminates specific foods identified by a person's immune system tests works better than a fake diet to control Eosinophilic Esophagitis (EoE). One hundred participants, aged 16-80 with active EoE, will be randomly assigned to follow either their personalized elimination diet or a sham diet for 8 weeks. The main goal is to see if the personalized diet leads to lower inflammation and fewer swallowing problems compared to the sham diet.
