Summary

This study looks at whether adding one medium potato a day to a healthy Mediterranean diet changes blood sugar and heart disease risk in adults with prediabetes. About 74 participants will follow either a diet with or without potatoes for 12 weeks. Researchers will measure changes in HbA1c and fasting glucose to see if potatoes make a difference.
