Summary
This study aims to see if eating a diet high in fermented foods like yogurt, kefir, and kimchi can change the mix of bacteria in the gut (the microbiome) of people with long COVID. Researchers at Mayo Clinic will enroll 40 adults with long COVID and randomly assign half to eat 6+ servings of fermented foods daily for 12 weeks, while the other half eats their normal diet. The main goal is to measure changes in gut bacteria, but the study will also track symptoms like anxiety, depression, and brain fog.
