This study tested whether replacing certain ingredients in cookies with quinoa could help healthy adults maintain normal blood fat and sugar levels, potentially preventing obesity and metabolic syndrome. Sixty healthy volunteers ate either a regular cookie or a quinoa-based cookie for 12 days, with a break in between. Researchers measured blood triglycerides, cholesterol, and insulin to see if the quinoa cookie helped keep these levels in a healthy range.
