Artisanal bread may soothe stomachs that rebel against regular bread

Summary
This study looks at whether a special artisanal bread made with whole wheat flour from an ancient durum wheat and sourdough causes fewer stomach problems than regular bread. About 40 adults who feel sick after eating conventional bread will eat the artisanal bread for 15 days. Researchers will compare their digestive symptoms before and after to see if the artisanal bread is better tolerated.
