Summary

This study looks at whether eating one medium potato daily as part of a Mediterranean diet affects blood sugar and heart disease risk in adults with prediabetes. About 74 participants will follow either a Mediterranean diet with potatoes or one without for 12 weeks. Researchers will measure changes in HbA1c and fasting glucose to see if potatoes make a difference.
