Can a potato a day keep diabetes away? new diet study investigates

Summary
This study aims to see if eating one medium potato daily as part of a healthy Mediterranean diet has the same effect on diabetes and heart disease risk factors as the same diet without potatoes. About 74 adults with prediabetes will be randomly assigned to follow one of these two diets, with all food provided, for 12 weeks. Researchers will measure changes in blood sugar, cholesterol, and other health markers to compare the diets.
