Summary

This 16-week study tested whether a low-fat vegan diet can improve insulin sensitivity and blood sugar control in people with type 2 diabetes. Twenty-six adults with type 2 diabetes and a BMI between 26 and 40 participated. They received weekly nutrition classes and one-on-one dietitian support. The study measured changes in liver and muscle fat, insulin function, body weight, and blood sugar levels.
