Summary
This early-stage study tests whether erythrodiol, a natural compound found in pomace olive oil, can help prevent the first steps of atherosclerosis (hardening of the arteries). Twenty-two healthy adults will eat high-fat meals with different amounts of erythrodiol, then have blood tests to see if it reduces fat uptake by immune cells. The goal is to understand if this olive oil component could one day help protect against heart disease.
