Summary
This early-stage study tests whether erythrodiol, a natural substance found in pomace olive oil, can reduce the first steps of artery hardening (atherosclerosis) in healthy young adults. Twenty-two participants aged 18-40 will eat high-fat meals with different amounts of erythrodiol and have blood tests over several hours. The goal is to see if the compound is absorbed and lowers blood fats and inflammation.
