Can your bread fix your blood sugar? food giant tests special starches

NCT ID NCT07408479

Summary

This study aims to learn if eating foods rich in specific 'slow' and 'resistant' starches can help control blood sugar and improve health in people with insulin resistance. For two months, 40 participants will follow a special diet while researchers track their blood sugar, inflammation, gut bacteria, and other health markers. The goal is to gather information, not to provide a cure, to understand how diet might help manage this condition.
