Summary

This study looked at whether eating potatoes (mashed, boiled, or baked) instead of white rice, pasta, or couscous could improve sleep quality and blood sugar control in healthy adults aged 40 to 80. Participants ate their usual diets but swapped out starchy sides for either potatoes or the other staples. The goal was to see if potatoes made a difference in sleep efficiency and nighttime glucose levels.
