Summary
This study tested whether eating potatoes (like mashed, boiled, or baked) for dinner, instead of foods like white rice or pasta, could improve sleep quality and overnight blood sugar control. It involved 71 healthy adults aged 40-80 who had poor sleep and ate few fruits and vegetables. Participants followed their assigned diet for 12 weeks while researchers measured changes in sleep and various heart and metabolic health markers.
