Summary
This study is testing whether eating a specific type of cheese aged in hay every day for 12 weeks can help lower high cholesterol. Researchers want to see if this cheese works better than regular cheddar by changing the mix of bacteria in the gut. They will enroll 40 adults with moderately high cholesterol to eat a daily cheese portion and track their cholesterol, gut bacteria, and other health markers.
