Summary
This study looks at whether a continuous glucose monitor can measure blood sugar changes after eating a starchy vegetable (potato) with or without herbs and spices. Ten healthy adults will wear a glucose monitor for at least 10 days and eat test meals. The goal is to see how well the monitor captures the body's glucose response, not to treat or cure any condition.
