Summary

This study looks at whether eating fermented foods (like yogurt, kimchi, and sauerkraut) can increase the variety of good bacteria in the gut and help with long COVID symptoms such as fatigue, anxiety, and brain fog. Researchers will enroll 40 adults who had COVID in the past year and now have ongoing neurological symptoms. Participants will track their food and provide stool samples to measure changes in their gut microbiome.
