Summary

This study aims to measure how well healthy adults over 60 absorb a specific protein component (tryptophan) from cooked cornmeal. Researchers will feed participants controlled diets with corn and collect breath samples to see how much of this nutrient the body retains. The goal is to better understand the quality of plant-based proteins to help improve dietary recommendations, especially as more people adopt vegetarian diets.
