Summary
This study tested whether replacing regular cookie ingredients with quinoa-based ones could help healthy people maintain better blood markers linked to obesity and metabolic syndrome. Sixty volunteers ate either regular cookies or quinoa-based cookies for 12 days each, with a break in between. Researchers measured cholesterol, triglycerides, insulin, and other health indicators in blood and stool samples to see if the quinoa cookies made a difference.
