Could ancient wheat be the answer for gluten sensitivity?

Summary
This study is testing if an ancient variety of wheat is easier for people with non-celiac wheat sensitivity to tolerate than modern wheat. Researchers will give 68 participants both types of wheat in a blinded test to see which one causes fewer gut and body-wide symptoms and improves quality of life. The study also aims to find a blood test to help diagnose this condition.
