Summary
This completed study looked at whether advanced glycation end products (AGEs) – compounds formed when food is cooked at high heat – affect kidney blood flow and oxygen levels. Ten healthy young men ate either a low-AGE meal (eggs) or a high-AGE meal (mixed nuggets), and their kidneys were scanned with special MRI and PET imaging. The goal was to see if AGEs alone, rather than protein in general, trigger changes in kidney function that might be linked to chronic kidney disease.
