Summary

This study looks at whether a diet rich in whole white potatoes can improve blood sugar control and blood pressure in adults aged 50-70 who are at risk for type 2 diabetes. Participants will eat either a potato-rich healthy diet or a typical Western diet for 12 weeks. Researchers will measure changes in glucose tolerance, insulin sensitivity, and blood pressure to see if potatoes can be part of a heart-healthy eating plan.
