Can a savory flavor trick you into eating less?

NCT ID NCT07438028

Summary

This study aims to understand if adding umami (a savory taste) or lowering the energy density of foods affects how much people eat over two weeks. Healthy adults will try three different diets for two weeks each, with some diets having added umami flavoring and some having lower-calorie foods. Researchers will measure daily food intake, satisfaction, appetite, and body weight to see if these changes influence eating behavior.
