Scientists track seaweed nutrients in blood after cracker snack

Summary

This study aims to understand how well the human body absorbs specific healthy compounds from a type of seaweed called Himanthalia elongata. Ten healthy volunteers will eat crackers with and without added seaweed powder on separate days. Researchers will take frequent blood and urine samples to measure how much of the seaweed's nutrients get into the bloodstream and how long they stay there.
