Summary
This study aims to see if eating more white potatoes as part of a healthy diet can help prevent type 2 diabetes and improve heart health in older adults who are at risk. Researchers will compare a potato-rich diet to a typical Western-style diet over 12 weeks in 42 participants. The goal is to gather evidence to inform future dietary guidelines about including potatoes in a healthy eating pattern.
