Summary
This study aims to see if a natural compound called erythrodiol, found in certain olive oils, can help prevent the early stages of artery clogging (atherosclerosis) that lead to heart disease. Researchers will give 22 healthy young adults high-fat meals containing different amounts of this compound and measure how their bodies respond over several hours. The goal is to understand if this ingredient can reduce harmful fat spikes and inflammation after eating.
