Summary
This study tested whether healthy young adults who stop eating red and processed meat for 4 weeks show changes in their blood vessels and key health markers. Twelve participants replaced red meat with fish, eggs, or white meat while keeping their diet otherwise the same. Researchers measured blood counts, cholesterol, and artery function before and after the diet change.
